Toasted Pistachio Nice Cream (Dairy-Free)

Do you love ice cream? Me too — however, my tummy doesn’t, and so I have come across banana ice cream, a.k.a. “nice cream.” It tastes so delicious and actually has the same consistency as ice cream.

Pistachios are great for Vitamin E (which improves the integrity of cells: i.e., skin cells), B-Vitamins (mood enhancers that treat stress and anxiety, as well as lower blood pressure), and they also boast a ton of minerals.


  • 2-3 frozen bananas, cut into 2″ dollar-sized pieces

  • 1/2 C toasted pistachios (on baking sheet in oven at 250° F for 15 minutes)


  1. In a powerful blender or processor, blend the bananas and pistachios. DO NOT add any liquid. Keep blending until the bananas have melted a bit and created a smooth, ice cream-like mixture. Stop and scrape down the sides if needed.

  2. Top with more toasted pistachios.
