This is the summer salad. If there is one ingredient that simply bursts with in-your-face freshness, mint would be it! So ridiculously refreshing, simple, and light, mint will leave you happy and energized — and feeling fresh yourself.
Containing plenty of seasonal greens, herbs, and Moroccan spices to amplify your taste buds, along with creamy hemp seeds and the gentle sweetness of blackberries, this salad is sure to please.
Leafy greens are among the most nutrient dense foods; the greener they are, the more nutrient dense they become. Antioxidants are a pigment of colour; therefore, the darker the colour, the more antioxidant rich the food. Alongside this abundance of antioxidants comes an array of other important micronutrients such as vitamins A and C, calcium, iron, magnesium, potassium, and folic acid.

Ingredients
Salad
4 cups leafy greens (here we used mustard greens and dandelion)
1T fresh mint, chopped
1T hemp seeds or seed of choice
½ cup blackberries
handful sprouts (optional)
Moroccan Dressing (yield: ½ cup)
¼ cup extra virgin olive oil
1 whole lemon
1T ground cumin
1t ground turmeric
1t ground ginger
1t ground cinnamon
¼ t cayenne (add more for more heat)
sea salt and ground pepper to taste
Method
Wash, dry, and chop leafy greens and mint. Add to a large bowl and set aside.
For the dressing, blend all ingredients together until smooth.
Toss dressing on leafy greens. Optional to massage greens with dressing — recommended for a tougher green such as kale.
Add salad to serving plates and top with hemp seeds, blackberries, and sprouts.
