This healthy alternative to traditional pasta salad makes for a great addition to summer barbecues.
Ingredients
2 tbsp olives
2 tbsp feta cheese, crumbled
2 cups chickpea spiral pasta, or pasta of choice
1/2 cup cucumber, chopped into bite size pieces
1 tsp capers
1 tbsp red onion, sliced
1 cup bell peppers, cubed
1 tsp fresh oregano, minced
1 tsp fresh basil, minced
1 tsp fresh thyme, minced
1 tsp fresh rosemary, minced
1 pinch sea salt
Greek Style Dressing
1/4 cup olive oil
1/4 cup apple cider vinegar
1 garlic clove
1 tsp dijon mustard
1 tbsp lakanto, or sweetener of choice
1 tsp sea salt
1 tsp pepper
Instructions
Cook pasta according to package. Drain.
Chop and combine all ingredients with spiral noodles.
For the dressing, add all ingredients in a blender. Mix until smooth. Pour dressing over pasta salad and toss until evenly coated.
Serve warm or cold and enjoy!
