The Holidays are just around the corner, so If you find yourself strapped for time, and you need to fuel up in the morning or maybe just need a quick snack in the afternoon – then reach for this SUPER simple pancake recipe! It’s loaded with protein and I have left out any possible source of fat, dairy or grains (gluten).
What’s more, it’s easy, it’s fast and it will leave you full and satisfied!
INGREDIENTS
• 1 banana
• 2 egg whites
• 1 tsp baking powder
• 1/2 tsp cinnamon
• *option to add a scoop of protein powder (add an extra banana if you do) • 1 Tbsp olive oil, coconut oil (or spray)
METHOD
1. Mash banana in a bowl.
2. Add egg whites, baking powder and cinnamon, mix until combined. 3. Add oil/spray to skillet over medium heat. Add banana mixture 1/4 C at a time and cook until you see bubbles bursting on the top of the pancake. Flip.
4. Cook 1-2 minutes longer.
5. Serve hot with maple syrup!
