Fresh Summer Roll Bar

All it takes is some prepping of the necessities to create a make-your-own salad roll bar, perfect for summer get-togethers, engagement parties, or baby showers!

Summer is a great time for a salad roll bar as you can choose from fresh, seasonal produce. By creating an assortment of dipping sauces that range from sweet to spicy—like chipotle peanut, chili lime, and creamy poppy seed, all featured below—you’ll create a perfect match for the crisp veggies and sweet fruit. If there are leftover ingredients afterwards, it is easy to toss them together ­­to create a salad — simply add to a mason jar with the sauce on the bottom and shake before serving.

To build your salad roll bar, create a spread of fresh ingredients of your choosing. We recommend avocados, grilled prawns, seared tofu, fresh oyster mushrooms, grilled teriyaki mushrooms, cucumber, an assortment of nuts, shredded red cabbage, microgreens, lime, mint, and cilantro. Sweeten the mix with fruit like strawberries, mangos, or peaches.

Chipotle Peanut Sauce

1/2 cup peanut butter
1/2 cup coconut milk (add more if sauce is too thick)
1 chili in adobo sauce
1 lime, juiced
2 teaspoons coconut sugar
1 teaspoon tamari sauce (or soy sauce)

Chili Lime Sauce

3 tablespoons coconut sugar
3 tablespoons hot water
2 tablespoons tamari sauce (or soy sauce)
Juice from 1 lime
2 tablespoons chili paste

Creamy Poppy Seed Sauce

¼ cup coconut milk (or any nut milk)
2 tablespoons apple cider vinegar
2 tablespoons coconut sugar
2 tablespoons poppy seeds
4 teaspoons coconut flour (or any flour)
1 lemon juiced
2 teaspoons hot mustard
Salt and pepper to taste
