February is the month of love, and who doesn’t love a melt-in-your-mouth chocolate lava cake? This notoriously finicky recipe is known for its extensive list of ingredients and lengthy prep time. I’ve given the whole thing an overhaul and brought both those numbers down to 3: Nutella, eggs, flour. Mix, bake, eat. That’s all you need to know.
This recipe prepares 2 romantic lava cakes, but if you’re celebrating St. Cupid’s day with your cat, you can put the whole thing in a mug and enjoy it all to yourself! (With catnip on the side for Fluffy.) I serve this with vanilla bean ice cream and a healthy sprinkle of flaked sea salt. Serve it piping hot in the ramekin or tip over and serve traditionally on a dish. Don’t skimp on the flakey salt; it’s life changing.
· ½ cup Nutella
· 1 whole egg and 1 egg yolk (you can add another yolk to make it extra creamy!)
· 5 tbsp flour
1. Preheat oven to 350°F.
2. Using a medium glass bowl, add the Nutella and melt in microwave for 30 seconds. Add egg, yolk, and flour, and mix until combined and smooth.
3. Spray 2 ramekins (or 1 mug) with olive oil spray and divide the batter between both. Bake for 20 minutes in the middle rack.
4. Remove immediately, sprinkle with salt, and serve!
